110g plain flour, sifted
pinch of salt
2 eggs
200ml oz milk mixed with 75ml oz water
50g butter
Flour & salt in a bowl, add eggs, gradually add milk while beating to a good batter. leave to stand for an hour (improves mix) and then fry in butter using a -really- hot pan. Flip or turn them, and serve with cheese/bacon for a savory dish, or sugar/syrup/lemon for a unhealthy option. Chocolate spread also makes a good serving idea. Check out Delia’s classic recipe.
